Grilled Chicken Margherita // Big Green Egg Recipe

Hi guys! Guess what?! It’s Luke, and I am trying my best at blogging. Caitlin does 99.9% of our blogging, but I come in every once in a while to make sure you guys don’t forget about me! 😉 Today I am going to write about something a little different. I wanted to try out a recipe Caitlin had found on Pinterest, and this is what happened.

Let’s call it, “Cooking With Luke.”

The actual recipe is called “Grilled Chicken Margarehtia” but we aren’t in Hollywood so let’s call it Chicken Mozeralla and pesto-y tomatoes. SO. MUCH. BETTER.

So I started off the normal way… with raw chicken. As I prepped the chicken, I got my beautiful Big Green Egg ready to go.

I cut the chicken in half first. That’s not what the recipe said to do, but I decided to be a bit of a rebel.

As you can see here, I am seasoning the chicken. If you guys out there haven’t tried the Montreal Steak seasoning, you are missing out. Get it. I promise it won’t disappoint.

I can practically smell it through the screen. Man, that looks good!

Caitlin made the tomato sauce/paste… whatever you want to call it. It looks a little funky but I promise it tasted like heaven! It’s just basil, tomatoes, and lemon juice!

Oliver is wondering when he gets to eat the chicken… I just hope he never learns how to open the fridge.

Man, isn’t my girl beautiful? Fun fact about Caitlin… she loves kissing Oliver. Fun fact about Luke… I won’t kiss Caitlin after that until she washes her lips. Am I weird or are there others like me?

DANG! Look at that. If heaven could be put on a plate and served, I’m pretty sure that’s what it would look like!

And of course, we have to have an action shot of me about to devour it. After this meal, I found a new love for pesto I never knew I had! It was a great finishing touch for the meal.
